Alu Sag

Ingredients:

2 tbsp ghee
1 onion, finely chopped
2 cloves garlic, finely chopped
1 inch piece ginger, finely chopped
1 tsp salt
1 tsp turmeric powder
1/2 tsp paprika or chilli powder
1 tsp ground coriander
1 lb potatoes, peeled and chopped into 1/4 inch rounds
1 lb spinach, washed and chopped finely
1 tsp garam masala

Heat ghee and lightly fry onion, garlic and ginger. Add the salt and spices and fry for two minutes. Add potatoes to the spices. Cook for 15 minutes. Add spinach and continue cooking until potatoes are tender. Sprinkle with garam masala before serving.
