Baked Eggplant
Ingredients:
1 large eggplant
vegetable oil
Wash and cut eggplant into 1/2 inch thick rounds. Grease a baking sheet with oil and brush both sides of eggplant rounds. Bake at 300º for about 15 minutes, flipping eggplant halfway through. Serve with Mint Chutney and Tamarind Chutney.
