Cauliflower Curry with Tofu
Ingredients:
1 cauliflower
4 cloves garlic
1 inch piece ginger
1/2 tsp salt
1/2 tsp paprika or chilli powder
1 tsp turmeric powder
juice of 1/2 lemon
2 tbsp vegetable oil
1 tsp garam masala
1 block extra-firm tofu, cut into small cubes
Wash the cauliflower and cut into florets. Grind the garlic, ginger, salt, paprika and turmeric, adding the lemon juice to make a paste. Heat the oil and fry the paste for a few minutes. Add the cauliflower and tofu, cover and cook on a low heat until cauliflower is tender. Sprinkle with the garam masala. Serve over rice.
