Garam Masala
Ingredients:
3 tbsp black or 2 tbsp green cardamom pods
3 cinnamon sticks
1 tbsp whole cloves
1/4 cup black peppercorns
1/2 cup cumin seeds
1/2 cup coriander seeds
Break open the cardamom pods, remove seeds and put aside. Break cinnamon stick into small pieces. Combine all the spices, roast and grind them. Store in an airtight container until ready to use.
