Green Jade Soup

Ingredients:

1/2 lb chopped spinach
1 cup canned creamed corn
3 cups vegetable stock
1/2 tbsp cornstarch (blended with 2 tbsp water)
1 tbsp vegetable oil
1 tbsp soy sauce
salt and pepper to taste

Mix the creamed corn with the stock and simmer. Stir in the cornstarch mixture to thicken. Heat the oil, and stir in spinach. Fry for 2 minutes, and pour in the creamed corn and broth mixture. Add the soy sauce. Stir until the spinach is well blended into the liquid. Simmer for 2 minutes and serve.
