Hummus
Ingredients:
2 cloves garlic
1-15 oz. tin of chickpeas or 1 cup dried chickpeas
6 tbsp lemon juice
1/2 tsp salt
3 tbsp tahini
2 tbsp water
1/2 tsp cumin powder (optional)
1/4 tsp paprika or cayenne
1 tbsp olive oil
sprig of fresh parsley (optional)
Pita bread for dipping
For tinned chickpeas: boil in water for 15-20 minutes. Drain and mash. For dried chickpeas: soak for at least 24 hours. Boil in water for 2 1/2 - 3 hours. Drain and mash. Using a food processor, blend all ingredients except for paprika/cayenne, oil and parsley. Put into serving bowl and let sit until needed. Mix paprika/cayenne with oil, in a cup and pour over blended ingredients just before serving. Garnish with a sprig of parsley. Serve with Pita bread for dipping.
