Lime and Chocolate Chili

Adding ingredients indigenous to a dish's region can often result in unique and surprising results. Chocolate and Limes are used commonly in Central and South America, and add a lovely depth to Chili.

Ingredients:

1 tbsp vegetable oil
1 onion, chopped
4 cloves garlic, pressed
1 red pepper, chopped
1 jalapeno pepper -optional
1 can diced tomatoes
1 can kidney beans
1 can chickpeas, rinsed
1 can baked beans
1 cup TVP (textured vegetable protein) -optional
1 tsp cayenne pepper
freshly squeezed juice of 1 lime
1 piece of chocolate (approx. 1/2 of a chocolate bar)
1 cup water
several grinds of black pepper

Heat oil in pot and fry onion until softened. Add garlic, red pepper and jalapeno pepper. Fry for 2 minutes. Add remaining ingredients and simmer for half to one hour.
