MISO GRAVY

Miso is a rich and flavourful paste made of soy beans that have been fermented in a number of different fashions. From extremely sweet, to rich savoury tastes, it is a staple condiment and enhancer in many dishes. In Japan, its virtues and vintages are discussed like fine wines.

This gravy is a wonderful way to enrich a sauce for roasted vegetables, mashed potatoes or steamed veggies.

Ingredients:

2 tbsp. miso paste
2 cups water
juice of 1/2 a lemon
2 tbsp. corn starch
1 tbsp. soy sauce

Combine all ingredients in a small saucepan over a medium-heat. Stir constantly until thickened which will take approximately 4 or 5 minutes.
