Pasta With Mushroom Sauce

Ingredients:

2 tbsp vegetable oil
1 large onion, finely chopped
3 cloves garlic, pressed
3 cups mushrooms, washed and finely chopped
2 tbsp wholewheat flour
6 fl oz vegetable stock
6 fl oz soy milk
3 tsp soy sauce
black pepper to taste

Heat the oil, add onion and fry for 5 minutes until softened. Add the garlic and mushrooms and cook for 2 minutes. Remove from heat and stir in flour. Add the stock and milk, and bring to a boil. Cook, stirring constantly for 3 minutes. Stir in the soy sauce and black pepper.

Serve over pasta, and garnish with chopped spring onions.
