Pisang Goreng (Fried Bananas & Plantains)

There are hundreds of different types of bananas and plantains to be found in the tropics, although we usually only see the occasional plantain (a firmer darker skinned type of banana that must be cooked before eating) and our usual banana which is known in tropical areas as a "dessert banana". This recipe can be used for both bananas and plantains.

4 medium sized bananas-fairly ripe or 3 ripe plantains
1/2 cup rice flour
2 tbsp. plain all-purpose flour
3/4 cup coconut milk
1/16 tsp salt
1 1/2 cup peanut oil

Mix the rice and all-purpose flours, 2 tbsp. of the peanut oil, coconut milk and the salt in a bowl making a smooth batter. Peel the bananas and cut lengthways down the middle (cut plantains the same way and then into 3 equal pieces). Coat the bananas well with the batter and fry in heated peanut oil until golden brown. Serve hot or cold.
