RECIPES - Quick and Easy

Many of the recipes on the other pages take considerable time and effort to prepare, reflecting the amount of work necessary to prepare the meals traditionally. It is not always possible to spend 3 hours (or 3 days) preparing meals however, so this section is dedicated to recipes that can be prepared in less than 1 hour!

CAULIFLOWER CURRY WITH TOFU
CHILLI
VIETNAMESE SALAD ROLLS
PASTA WITH MUSHROOM SAUCE
PARSLEY RED POTATOES
TOFU SCRAMBLER
SAVOURY BROWN LENTIL STEW
MUSTARD-MARINATED TOFU
SPAGHETTI SQUASH
STUFFED ZUCCHINI
FRESH SALAD DRESSINGS
TOFU CHEESECAKE

A few notes on some Quick and Easy ingredients:

RED STAR NUTRITIONAL YEAST: Do not confuse this yeast with brewer's yeast or Torula yeast. Red Star nutritional yeast is a primary grown yeast (cultivated specifically for its nutritive value) which has a toasted, nutty-cheesy flavour. This is an excellent source of non-animal vitamin B12, which can sometimes be more challenging to obtain when eating a strictly vegan diet.

HERBES DE PROVENCE: Commonly found in French Provencal cooking, this is a mixture of rosemary, fennel, thyme, savory, basil, and lavender.

TVP - TEXTURED VEGETABLE PROTEIN: Soy flour that has been defatted and pressed into a solid form. Comes in a variety of different sizes (think grain of rice to large cherry) and absorbs surrounding flavours wonderfully. Excellent source of protein without fat.
