Parsley Red Potatoes
Ingredients:
1 lb red potatoes, scrubbed and diced
1 tbsp olive oil
1/4 cup fresh parsley, finely chopped
1/4 tsp granulated garlic or 2 cloves, pressed
black pepper to taste
pinch of salt
Drop potatoes into rapidly boiling water and cook for 10-15 minutes until tender but not mushy.
Drain well, and toss with olive oil, then parsley, garlic, pepper
and salt. Serve hot.
