Spaghetti Squash
Ingredients:
1 spaghetti squash
1/4 cup olive oil
salt and pepper to taste
Preheat oven to 350º. Wash outside of squash to remove dirt. Cut squash in half lengthways, and scoop out seeds (dig deep because some will hide). Place face down on a baking sheet with enough water to cover bottoms slightly. Cook for 1 hour, or until tender when pierced with a fork. Check occasionally to make sure that water does not evaporate. Scrape out squash with a fork (it will come out like spaghetti strands). Toss with olive oil, salt and pepper. Serve hot.
