Tabouli

Ingredients:

4 cups water
3/4 cups bulghur wheat
2 medium tomatoes diced
4 tbsp finely minced onion
2 cups finely chopped fresh parsley
1/2 cup finely chopped fresh mint (optional)
3 tbsp lemon juice
1 tsp salt
2 tbsp olive oil

Boil the water, pour it over the bulghur and let stand for 45 minutes. When bulghur becomes swollen, drain the excess water, then squeeze by handfuls to remove any additional water. Pouring it into a clean tea-towel and then squeezing the water out also works well. In a bowl, combine with remaining ingredients and mix well. Serve chilled.
