Tofu Scrambler
Ingredients:
1 block firm tofu
2 tsp vegetable oil
2 cloves garlic, pressed
1 cup finely chopped vegetables (peppers, mushrooms, onions, tomatoes)
1 tbsp Red Star nutritional yeast
1/4 tsp turmeric
2 tsp soy sauce
2 tbsp fresh parsley, finely chopped
Drain tofu well and mash. Sauté vegetables and garlic in oil until softened.
Add tofu and seasonings. Scramble with a fork, and cook over medium
heat for 2-3 minutes. Sprinkle with parsley and serve.
