Vietnamese Salad Rolls

Ingredients:

These ingredients are enough for four people - each person having two.

vegetable oil
1 block of firm tofu, sliced into thin strips
8 green onions
8 Vietnamese or Thai round rice wraps
8 leaves of Romaine lettuce
1 package rice vermicelli, or thin rice noodles
1 cup Hoi Sin sauce
3/4 cup Bumbu Satay Sauce

Heat oil in a pan and fry tofu strips until lightly browned. Remove and drain on paper towels. Pour boiling water into a shallow bowl and soak rice noodles until soft. Pour boiling water into another bowl and soak each rice wrap (one at a time) until soft and translucent. Remove and lay on a plate (watch not to burn your hands in the water).

The bottom third of the wrap should be left with no food on it to allow wrapping. Place a leaf of lettuce onto the wrap, then lay a green onion in the leaf. Add some rice noodles and tofu. Fold bottom of wrap up over the other ingredients. Then, starting with the left side roll the remaining part of the wrap around. You want to end up with a tube. For the dipping sauce, mix Hoi Sin and Bumbu Satay sauces.
